Seabuckthorn Berry Buchtein

Ingredients:

300g seabuckthorn berries

1.5 tbsp corn starch

400g Greek yogurt

1 tsp cinnamon

50g sugar

40g honey

50g sugar

250g whipping cream


Preparation:

In a small pot, add berries and cover with water until just covered. Bring to boil and let cook for 15 minutes. Then strain berries from juice, push berries through strainer into the juice. Add juice back into the pot and add sugar and honey, bring to boil again. Mix cornstarch with a bit of water to make a slurry, add to pot and bring to boil again, constantly whisking. Once thickened, remove from heat and let cool down.


Meanwhile, mix yogurt, sugar and cinnamon in a bowl and set aside. In another bowl, whip up the whipping cream until stiff peaks form. Add yogurt mixture to whipped cream and mix well. Layer yogurt mixture and seabuckthorn berries in serving cups. Let cool for 1 hour and serve.
