Freeze-Dried Seabuckthorn Powder: What It Is and How to Use It

Canadian-grown freeze-dried seabuckthorn powder with bright orange berries and green leaves

Walk through our Saskatchewan orchard in late summer and one colour immediately catches the eye: brilliant orange. Clusters of seabuckthorn berries cover the branches, glowing against narrow green leaves and wide prairie skies.

The berries may be small, but their flavour is anything but. Seabuckthorn is intensely tart and citrus-like, with tropical notes that can recall passion fruit or pineapple. Freeze-drying captures that distinctive flavour and colour in a convenient powder that can be kept in the cupboard and added to everyday foods.

If freeze-dried seabuckthorn powder is new to you, here is what it is, how we make it and some simple ways to enjoy it.

What is seabuckthorn?

Seabuckthorn—also commonly written as sea buckthorn—is a hardy shrub that produces vivid orange berries. Although its flavour may seem tropical, the plant is well suited to northern climates, including the Canadian Prairies.

Our family planted its first seabuckthorn orchard in Saskatchewan in 1998. What began as a new idea on the family farm grew into Northern Vigor Berries and the nvigorate line of Canadian seabuckthorn products.

Seabuckthorn can be enjoyed in several forms, including frozen berries, juice, purée, syrup, spread, tea and powder. The powder is especially versatile because it provides the flavour and character of the berry without requiring freezer space.

What is freeze-dried seabuckthorn powder?

nvigorate freeze-dried seabuckthorn powder is made from one ingredient: 100% ground organic Canadian seabuckthorn berries, with no added sugar and no fillers.

After harvest, our berry-laden branches are frozen quickly. Once frozen, the berries can be separated from the branches and leaves. The berries are then freeze-dried and finely ground to create a bright orange whole-berry powder.

Unlike conventional hot-air dehydration, freeze-drying removes moisture from frozen fruit under vacuum. This method helps retain the berry’s vivid natural colour, distinctive tart flavour and nutritional qualities while creating a lightweight, convenient product.

Because it is a whole-berry powder, it is different from seabuckthorn oil, a sweetened drink mix or a juice powder made with added carriers. Nothing has been extracted and nothing unnecessary has been added.

Why choose freeze-dried powder?

Fresh and frozen seabuckthorn berries have many culinary uses, but the powder makes this unusual Canadian fruit especially easy to keep and use.

  • Convenient: No washing, thawing or freezer space is required.

  • Concentrated in flavour: A small amount brings noticeable tartness and bright colour to a recipe.

  • Easy to measure: Add a little, taste and adjust until the flavour is right for you.

  • Versatile: It works in both sweet and savoury foods.

  • Simple: It contains one ingredient, with no added sugar or fillers.

  • Travel-friendly: The sealed pouch is convenient for camping, travel or sending to family and friends.

Vitamin C and a distinctive omega profile

Our freeze-dried ground seabuckthorn berries are an excellent source of vitamin C.

Seabuckthorn also has a distinctive fatty-acid profile that includes omegas 3, 6, 7 and 9. Omega-7—known as palmitoleic acid—is especially unusual among plant foods. Laboratory analysis of our freeze-dried whole-berry powder identified all four omega families.

What does seabuckthorn powder taste like?

The simplest description is intensely tart citrus with tropical notes. Some people notice flavours reminiscent of passion fruit or pineapple, while chefs sometimes describe the berry as “mangoish.”

Seabuckthorn is not a mild berry, and that is part of its appeal. Its lively acidity can brighten sweeter ingredients, balance rich or creamy foods and add complexity to sauces and dressings. It also gives recipes a naturally vibrant orange colour.

If you are tasting it for the first time, begin with a small amount, mix well and add more to suit your preference.

Seven easy ways to use freeze-dried seabuckthorn powder

1. Blend it into a smoothie

Add seabuckthorn powder to a favourite fruit smoothie. Its tart flavour pairs especially well with banana, mango, pineapple, peach, apple and berries.

2. Stir it into yogurt

Mix a little powder into plain or vanilla yogurt. The creamy base softens the tartness while the powder adds colour and a lively fruit flavour.

3. Brighten porridge or overnight oats

Stir the powder into porridge after cooking, or add it to overnight oats before serving. Fruit, nuts, seeds or a touch of your preferred sweetener can round out the flavour.

4. Make a colourful vinaigrette

Whisk seabuckthorn powder into a vinaigrette with oil, vinegar and your favourite seasonings. Its acidity works naturally in salad dressings and adds a warm orange hue.

5. Add it to sauces and marinades

Use the powder anywhere a recipe could benefit from a tart, fruit-forward note. Try it in a glaze, marinade, dipping sauce or savoury fruit sauce.

6. Use it in baking

Add seabuckthorn powder to muffins, quick breads, cookies, energy bites or icing. Its strong flavour means you can start with a small amount and adjust in future batches.

7. Mix it into drinks

Stir or blend it into water, juice, tea or a protein shake. A shaker bottle or blender helps disperse the fine whole-berry powder evenly.

A practical tip for better results

Seabuckthorn powder is concentrated and naturally tart, so it is usually best to add it gradually. Mix it first into a small amount of liquid or a soft ingredient, then stir that mixture into the rest of the recipe. This helps distribute the powder more evenly and reduces small clumps.

How should it be stored?

Moisture, heat, air and light can affect fruit powders. Keep the pouch tightly sealed in a cool, dark place, and always use a clean, dry spoon.

The package includes an oxygen absorber to help protect product quality. Do not eat the oxygen absorber.
